Can you upgrade the memory of this HP Omen 16-am0063nf?
Yes, by replacing the modules. The two accessible slots are filled with 2 × 8 GB of DDR5-5600, i.e. 16 GB in dual-channel. To move to 32 GB, you therefore have to remove both modules rather than add one.
Can you add a second SSD to this HP Omen 16-am0063nf?
Yes: the machine has two M.2 slots for SSDs, only one of which is taken by the supplied 1 TB PCIe Gen4 NVMe drive. A second drive can therefore be fitted without replacing the first — useful for keeping the system separate from a game library.
